Rodda’s and Paul Ainsworth have collaborated to create a gourmet afternoon tea tasting menu that enthusiasts can recreate at home. Drawing from new research by Rodda’s, which highlights a growing interest in unconventional cream tea variations, Paul has developed an innovative five-course menu that showcases both traditional and experimental flavours.
The findings revealed that Britons are eager to try unique cream tea fillings such as cinnamon, sugar, and apple slices (21%), lemon curd (21%), and raspberry preserves with almond butter (20%). Savoury options like smoked salmon with cream cheese and sweet chilli jam with cheddar were also popular.
The Delectable Five-Course Menu
Paul Ainsworth’s menu, designed to highlight the versatility of Rodda’s Cornish clotted cream, includes the following dishes, each paired with a premium loose-leaf tea from JING:
- Slow-cooked BBQ beef short-rib: Served with horseradish clotted cream, watercress, on a caramelised onion scone, with roast beef gravy. Paired with Organic Wuyi Oolong.
- Cheddar cheese and caramelised Cornish cider apples: Featuring cinnamon clotted cream on a cheese scone. Paired with Dragon Well Green Tea.
- Traditional Cornish strawberry cream tea trio: Fresh, poached, and jam strawberries with Rodda’s Cornish clotted cream. Paired with Assam Breakfast tea (served with milk).
- Chicken liver parfait: On toasted cherry scones with plum jam and hibiscus-scented clotted cream. Paired with Cold Infused Blackcurrant and Hibiscus or Cherrywood Lapsang.
